Ingredients

  • 3 Egg Whites

  • Vanilla Powder or Extract

  • 1/4 cup Low Fat Ricotta

  • Zest of 1/2 Lemon

  • 1 Tbsp of Freshly Squeezed Lemon Juice

  • 30 grams Oat Flour

  • 1 tsp Baking Powder

Steps

  1. Beat the egg whites until white peaks form.

  2. Combine the oat flour and baking powder in a small bowl.

  3. Mix the ricotta cheese and lemon zest along with vanilla extract.

  4. Now you will gently fold in the ricotta mixture with beaten egg white and then add the dry ingredients. Mix well. Be careful NOT TO OVER MIX so you do not lose the volume from the egg whites.
