Ingredients
Dry Ingredients
30 grams Quick Oats
20 grams Level-1 (any flavor you prefer)
Cinnamon (optional)
Wet Ingredients
16 grams Creamy Almond Butter
25 grams Unsweetened Vanilla Almond Milk
Mix-Ins
7 grams Dry Fruit (i.e. raisins, cranberries, goji berries, etc.)
10 grams Seeds or Nuts (i.e. crushed walnuts, sliced almonds, pumpkin seeds, etc.)
Steps
In a small bowl, mix oats, nut butter, and protein powder. Using a spoon, break up the nut butter until you have a nice crumbly mixture.
Stir in almond milk and mix well to combine.
Add in whatever mix-ins you choose to use for your breakfast cookie. This is optional, but you can season it with vanilla bean specs and cinnamon.
Scoop out the whole mixture on a small plate. Using the back of a large spoon, flatten it out to have an even thickness.
Wrap the cookie in parchment paper and let it set in the fridge overnight.
