Ingredients
30 grams of quick ground oats or oat flour
3 egg whites
1/4 cup of plain yogurt or kefir
1/2 tsp of baking powder
pinch of salt
cinnamon to taste
1 tsp of vanilla extract
1 packet of Truvia
1-3 tbsp almond milk to thin out the batter (if needed)
Steps
Heat a nonstick pan.
In a small bowl mix oat flour with baking powder, a pinch of salt, cinnamon, and Truvia.
In a medium bowl, whisk the egg whites with Kefir, and vanilla extract and add the dry ingredients to that mixture. Let the batter set for 2-3 minutes before using it.
In a preheated nonstick pan sprayed with nonstick spray, pour the batter into 3 equal parts and coo the pancakes separately.
Set the heat on medium-low and as soon as the top starts to bubble a little bit, flip the pancakes and finish them off for another minute. You do not want to overcook them because they might come out dry.
