Ingredients

Dry Ingredients

  • 60 grams Oat Flour

  • 60 grams Whole Wheat Pastry Flour

  • 60 grams Level-1 Pumpkin Spice Latte Protein Powder by 1st Phorm

  • 20 grams Coconut Flour

  • 30 grams Brown Sugar Truvia Blend

  • 1 tablespoon Pumpkin Spice Seasoning

  • 2 teaspoons Baking Powder

  • 1 teaspoon Baking Soda

  • Pinch of Salt

  • Pumpkin Seeds (to sprinkle on top)


Wet Ingredients

  • 2 Whole Organic Eggs

  • 1 teaspoon Vanilla Extract

  • 15-ounce can Pumpkin Puree


Cheesecake Filling

  • 8 ounce Low-Fat Cream Cheese (room temperature)

  • 1 Egg Yolk

  • 30 grams Truvia

  • 20 grams Level-1 Pumpkin Spice Latte Protein Powder by !st Phorm

Steps

  1. Preheat the oven to 350 degrees F.

  2. In a large bowl, whisk all the dry ingredients together.

  3. In a medium bowl, whisk all the wet Ingredients together.

  4. Pour the wet ingredients into the dry mixture. Using a large spoon or spatula, mix the batter gently so it is evenly combined and smooth.

  5. In a medium sized bowl, using an electric mixer, combine cream cheese, egg yolk, Truvia, and Level-1 protein Powder.

  6. Pour the batter into muffin pan, filling each tin 3/4 full. Scoop a spoon full of the cream cheese mix on top, sprinkling with pumpkin seeds. Bake for 22-25 minutes.

  7. Let them cool completely on a wire rack before eating.
