Ingredients

Dry Ingredients

  • 7 grams tablespoon Coconut Flour

  • 20 grams Level-1 Pumpkin Spice Latte Protein Powder by 1st Phorm

  • 1 teaspoon Pumpkin Spice + Cinnamon (to taste)

  • 1 teaspoon Baking Powder

  • Pinch of Salt


Wet Ingredients

  • 1 Egg White

  • 80 grams Pumpkin Puree

Steps

  1. Mix all dry and wet ingredients well in a medium bowl.

  2. Generously spray a large mug with non-stick cooking spray, and transfer the batter into the cup.

  3. Place a paper towel into the microwave and set the mug or bowl on top. This is to catch any batter if your mug cake overflows.

  4. Microwave the cake for 1 minute, or until cake is done in the middle. If the cake needs to be cooked some more, place it back into the microwave and cook at 20 second intervals. Typically, 1 minute plus an additional 20 seconds is enough.

  5. You can eat it straight from the cup, or you can transfer the cake upside down on a serving plate.
