Ingredients

Dry Ingredients

  • 100 grams Almond Flour

  • 70 grams Oat Flour

  • 1/2 teaspoons Baking Powder

  • 1/4 teaspoon Baking soda

  • Pinch of Salt

  • Pumpkin Pie Spice Seasoning (homemade mix: 1/4 teaspoon of each ingredient: cinnamon, nutmeg, cardamom, all spice, ginger)


Wet Ingredients

  • 30 grams melted Coconut Oil

  • 80 grams Pumpkin Puree

  • 1 teaspoon Vanilla Extract

  • 40 grams Swerve Brown Sugar

  • 45 grams Lily's White Chocolate Chips

Steps

  1. In a medium bowl, combine all the dry ingredients. Whisk a few times to thoroughly mix all ingredients.

  2. In a small bowl, combine melted Coconut oil, pumpkin puree, vanilla extract, and Swerve brown sugar.

  3. Using a large spoon, mix dry with wet ingredients, adding in the chocolate chips.

  4. Place the bowl in the fridge for 40-60 minutes to set.

  5. Begin preheating the oven to 350 degrees F about 10 minutes prior to baking.

  6. Roll about 10-12 medium-size balls and press to form each into a cookie shape on a parchment-lined baking sheet.

  7. Bake for 10-12 minutes.

  8. Let the cookies set on top of the baking sheet for 2-3 minutes, then carefully transfer them on a cooling rack.
