Ingredients

Dry Ingredients

  • Flour Mix: 70 grams Whole Wheat Pastry Flour, 80 grams Millet Flour, 50 grams White Rice Flour

  • 2 teaspoons Baking Powder

  • 1/2 teaspoons Baking Soda

  • Pinch of Salt

  • 2 teaspoons Cinnamon

  • 1/2 teaspoons Ground Ginger

  • Freshly-Ground Nutmeg (to taste)

  • 1/4 teaspoon Cardamom


Wet Ingredients

  • 40 grams Melted Coconut Oil

  • 30 grams Maple Syrup

  • 50 grams Truvia Brown Sugar

  • 1 Egg (room temperature)

  • 1 teaspoon Vanilla Extract

  • 1/4 Cup Pumpkin Seeds (to top each muffin before baking)

  • 330 grams Pumpkin Puree

Steps

  1. Preheat the oven to 350 degrees F.

  2. In a medium-sized bowl, mix all the dry ingredients together.

  3. In a small bowl, mix all the wet ingredients together.

  4. Pour the wet mixture into the dry mixture and combine well. The batter will be thick but NOT firm like cookie dough. Do not worry. It will set well after it has baked and cooled completely.

  5. Scoop a medium, cookie-size batter on top of the lined baking sheet and sprinkle with pumpkin seeds on top.

  6. Bake for about 23 minutes. Wait for 10 minutes before transferring them onto a cooling rack.
