Ingredients

Dry Ingredients

  • Pinch of Pink Salt

  • Few dashes of Pumpkin Pie Spice Seasoning

  • 20 grams Pumpkin Spice Latte Protein Powder by 1st Phorm


Wet Ingredients

  • 1.5 cups riced, frozen Cauliflower

  • 1/4 cup boiling Water

  • 3 Egg Whites or 100 grams Egg Whites from the carton

  • 1/4 cups Pumpkin Puree


Optional Toppings

  • 30-50 grams Banana (thinly sliced)

  • 1 tablespoon Cocoa Nibs

  • 1 tablespoon sliced, toasted Almonds

  • 16 grams creamy Almond Butter

Steps

  1. Place the frozen cauliflower into a microwave-safe bowl. Pour 1/4 cups of boiling water over it. Add a pinch of pink Himalayan salt, and dashes of pumpkin pie spice seasoning. Stir well.

  2. Cook in the microwave for 1 minute. Drain any access water. The cauliflower needs to be steaming hot. If it is not, put it back into the microwave and cook for an additional 20-30 seconds.

  3. Stir in the egg whites and place them back into the microwave for 30 seconds. Take it out and stir in the pumpkin puree. If it seems a little runny, place it back in the microwave for another 20-30 seconds. Be careful not to overcook. It shouldn't turn into a cauliflower cake, but the texture is more like a thick porridge.

  4. Once it's cooled down, add in the protein powder and garnish with almond butter, sliced bananas, cocoa nibs, and toasted almonds.


*Note: If you want to keep it super low-carb, omit the sliced bananas.
