Ingredients
5 Oz King Salmon Filet
1 Tbsp Coconut Oil
Salt and Pepper to Taste
3 Cups of Baby Spinach
1⁄2 Red Bell Pepper Sliced
1⁄4 Cup White Onion, Diced
1-2oz Raw Soft Goat Cheese / Crumbled
Balsamic Vinaigrette:
1⁄2 Tbsp Olive Oil
1 Tbsp Balsamic Vinegar
To make this right before serving: Whisk
the 2 ingredients with the fork in a small
metal bowl.
Steps
Preheat the oven to 425F and line a baking sheet with foil. Season your salmon filet with salt and pepper and place it in the oven. Bake for 10 minutes and for the remaining 2 minutes, set the oven on broil.
In a large nonstick pan, heat up 1 tbsp of oil and sauté the onion and bell pepper. Season them with salt, pepper directly in the pan.
To serve, place the spinach in a large serving salad plate and transfer the warm onions and bell pepper to the spinach, toss it around with two forks so the hot onion and bell pepper warm up the spinach.
Add goat cheese crumbles to the salad, drizzle the salad with balsamic vinaigrette. Place the salmon on top.
