1 Tbsp Coconut Flour
1/2 Tsp Pumpkin Spice
1 Tsp Baking Powder
Pinch of Salt
Wet Ingredients:
4 oz Mashed Sweet Potato
1 Tsp Vanilla Extract
4 Egg Whites
Steps
In a medium sized bowl, combine the mashed potato with egg whites, and whisk until fully blended.
Add the spice, additional cinnamon if you prefer, baking powder, salt, and coconut flour.
Heat a nonstick pan on medium-high heat, spray with nonstick cooking spray, and pour in the sweet potato pancake batter 2 at a time (this recipe makes 4 medium sized pancakes).
