About the Recipe

Embark on a culinary adventure with "Zeggs," a delightful unusual breakfast dish that combines zucchini and egg whites in a way you've never experienced before. While the name might initially sound strange, the flavors and textures meld to create a dish that is both delectable and nourishing. Zeggs are not just a meal but a celebration of ingenuity in healthy eating, perfectly aligned with a fitness-focused lifestyle.

Zeggs: Fluffy, nutritious zucchini egg whites with sweet, crunchy, indulgent toppings!

How it Can Help Your Fitness

Zeggs begin with a simple yet ingenious mix of finely shredded zucchini and fluffy egg whites, seasoned with a blend of warming spices such as cinnamon and pumpkin pie spice. The ingredients are gently cooked with a touch of water, transforming them into a light, comforting scramble that is both moist and flavorful. This base provides a fantastic texture that's both pleasing to the palate and packed with health benefits.

For those dedicated to improving their health and fitness, Zeggs offer a wealth of nutritional advantages. Zucchini is low in calories but high in essential nutrients like potassium, manganese, and antioxidants, making it great for hydration and immune support. The egg whites contribute a high-quality protein source, vital for muscle repair and growth after workouts, ensuring that your body gets the right fuel for recovery and strength building.

The dish is sweetened naturally with a few drops of liquid Stevia, a plant-based sweetener that adds a hint of sweetness without the extra calories or sugar, making it ideal for those monitoring their carbohydrate intake. To top off the dish, you can add sliced bananas or fresh berries for a burst of natural sugars and vitamins, enhancing the dish’s nutritional profile. A sprinkle of chopped nuts or a swirl of nut butter introduces healthy fats and proteins, providing long-lasting energy and satiety.

Ingredients

  • 1/4 cup Water

  • Cinnamon

  • Liquid Stevia Drops (flavor of choice)

  • Spices (I.e. cinnamon, pumpkin pie spice, etc.)

  • 4-6 Egg Whites

  • 100-200 grams Shredded Zucchini

Topping

  • Sliced 1/3 Banana or Berries

  • Chopped Nuts or Nut Butter

  • PB Sauce (2 tbsp water, stirred until smooth)

Steps

  1. Bring 1/4 cup water to a boil. Add Cinnamon, stevia, and/or other desired spices, flavors and sweeteners.

  2. Add 4-6 egg whites to boiling water, reduce heat to medium, and stir constantly to avoid poached egg whites.

  3. Once the mixture is primarily opaque, mix 100 grams of shredded zucchini (or more if you want). I use almost two whole zucchini and stir well.

  4. Allow cooking over medium-low heat, stirring frequently. This is where I add 1 tbsp cocoa if I'm going to make chocolate zeggs, as well as additional sweetener and extracts if needed.

  5. Allow zeggs to cook until your desired consistency is met. The longer you coo them, the mushier and less "piecey" the zucchini becomes.
