Ingredients
1/4 cup Water
Cinnamon
Liquid Stevia Drops (flavor of choice)
Spices (I.e. cinnamon, pumpkin pie spice, etc.)
4-6 Egg Whites
100-200 grams Shredded Zucchini
Topping
Sliced 1/3 Banana or Berries
Chopped Nuts or Nut Butter
PB Sauce (2 tbsp water, stirred until smooth)
Steps
Bring 1/4 cup water to a boil. Add Cinnamon, stevia, and/or other desired spices, flavors and sweeteners.
Add 4-6 egg whites to boiling water, reduce heat to medium, and stir constantly to avoid poached egg whites.
Once the mixture is primarily opaque, mix 100 grams of shredded zucchini (or more if you want). I use almost two whole zucchini and stir well.
Allow cooking over medium-low heat, stirring frequently. This is where I add 1 tbsp cocoa if I'm going to make chocolate zeggs, as well as additional sweetener and extracts if needed.
Allow zeggs to cook until your desired consistency is met. The longer you coo them, the mushier and less "piecey" the zucchini becomes.
